My sister had asked if my mother and I would be making a cake for her twin girls (my nieces). My mother inevitably asked me if I would like her assistance, stating she could make a boxed cake. Seeing as how I had envisioned making a decent tasting cake that will look just as awesome, I decided to get a boxed brownie mix (No Pudge Fudge Brownies) and made the aforementioned with canned pumpkin, egg whites and added dark cocoa powder, as the sweetness was so overpowering. There are SO FEW recipes and instructions on ice cream cakes, so I first decided to make my own soft serve to spread on top, but realized, if I had bought store bought ice cream and mixed as it was thawing to a soft serve consistency, I would have the same effect, which I did. I had bought Edy's Slow-Churned Vanilla 1/2 Fat. Fewest ingredients that I could find that wasn't so fatty and not so chemical. I also made the whipped cream by hand, including the flowerettes and scrolls you see that I made by hand. Quickly. The design is made of chocolate, with molded chocolate hearts, stars and flowers and chocolate chip accents. Chocolate used was Guittard, which I was able to find, ironically enough, at Ocean State Job Lot. I dyed the white chocolate to the colors I desired with Wilton Candy Color. Once I make a bit more money, I'll splurge on cocoa butter coloring. If anyone would like further instructions on how I made the cake, let me know! I would be more than happy to post, because, as I've stated, so few instructions.
